Tetelas are a traditional Mexican dish originating from the region of Oaxaca. These delicious triangular treats are made with masa dough, stuffed with refried beans and melty Oaxaca cheese, and are often paired with salsa, Mexican crema, and shredded lettuce for a delightful street food experience.

Ingredients:

🌽 1 cup masa harina
💧 1 cup hot water
🐷 3 tbsp pork lard
🫘 2 cups pinto beans with liquid
🌶 4 oz chorizo
🧅 1/4 onion
🧀 1 cup shredded Oaxaca cheese


Instructions:

  1. Prepare the Refried Beans:
    • In a pan over medium heat, add the pork lard. Once melted, add the chopped onion and cook until it becomes translucent.
    • Add the chorizo to the pan. Crumble it with a spatula and cook for about 5 minutes, until it starts to brown.

  2. Prepare the Masa Dough:

  3. Shaping the Tetelas:
    • Use a tortilla press to create tortillas that are neither too thick nor too thin. If you don't have a tortilla press, use a cutting board or a plate to press down the dough.
    • Place a portion of the refried beans and some shredded Oaxaca cheese in the middle of each uncooked tortilla.
    • Fold the tortilla into a triangle shape, ensuring the edges are well-sealed to prevent filling from spilling out during cooking.
  4. Cooking the Tetelas:
    • Heat a griddle over medium heat. Place the folded tetelas on the griddle and cook for about 3 minutes on each side, or until they are firm and golden brown.
  5. Serving:
    • Serve the tetelas with salsa, a dollop of Mexican crema, and a sprinkle of shredded lettuce for added flavor and freshness.
